Yams and Apples

This is a nutritious, more eye-catching and  flavorful alternative to the sugary-sweet  mashed yams with marshmallows, that has  been the traditional treatment of this humble  tuber.

Ingredients


● 4 fresh yams, peeled and diced small 

● 1 medium yellow onion, peeled and diced  small 

● 1 ½ tsp kosher salt 

● ½ tsp course ground black pepper 

● 2 Tbsp olive  

● 2 granny smith apples, cored and diced  small

Preparation

In a large skillet, sautee the onions in oil over medium-high heat. When the onions are translucent and sweet smelling, toss in the sweet potatoes, and reduce the heat to medium. Continue cooking until the sweet potatoes are soft to your liking. Remove from the heat and toss in the diced apples. Transfer to a serving dish and serve hot.  



Tips:  Alternatively, you can cook the apples with  the yams and onions. Once the apples and  yams are soft, mash the whole affair until it is  your desired level of creaminess, then spread  it into a casserole dish and top with chopped  candied pecans.
