Pancake Mix

4 cups all purpose flour

2 cups oat flour

1/2 cup sugar

1/2 cup flax meal

6 tsp baking powder

2 tsp salt


Combine all ingredients and whisk until fully mixed. Store in an airtight container.


To make pancakes:


1 cup mix

3/4 cup water

2 Tbsp vegetable oil

1 egg, beaten


Gently whisk together just until combined, and allow to sit 5 minutes before cooking. Thin with a little water or milk if you want thinner pancakes.


Cook on a griddle set to 350°, until browned on both sides and done all the way through.


To make Waffles:


2 cups mix

1 1/2 cup milk

1/4 cup oil

1 egg


Hest waffle iron.

Combine all ingredients and whisk gently together until just combined; let sit five minutes.


Cook according to waffle maker instructions.
